Gluten is found is wheat, rye and barley (and the less common triticale), all of which are ingredients in many common foods such as bread, pasta, biscuits and cakes. Gluten is also found in many manufactured products such as sausages.
BSNA member companies provide an extensive range of foods which are manufactured specifically for the needs of individuals intolerant to gluten. These foods are formulated from ingredients which match the special dietary requirements, are manufactured in facilities dedicated to dietary foods and are fortified, where needed, with the fibre and calcium that can be missing from gluten-free diets.
Whilst oats contain a similar protein to gluten, called avenin, research suggests that pure, uncontaminated oats and oat products are not toxic to the majority of adults and children with coeliac disease. However, oats are often processed and packed in the same environments as other cereals (including gluten-containing cereals) which leads to a significant risk that oat products may contain traces of gluten. However, pure uncontaminated oat products are available through many mainstream shops which have been specially processed away from other gluten containing cereals and are suitable for coeliacs.
